Senior Sous Chef

We are looking for an experienced and enthusiastic Senior Chef de Partie or Sous Chef to join our team at The Ship Inn Wylam. Our menu is based around the very best of seasonal and local produce Northumberland has to offer.

You get to oversee a section of the kitchen, be it pastry, butchery, fish, sauces, vegetables and so on. Also running the kitchen in the Head Chefs absence.

Key responsibilities:

Preparing, cooking and presenting dishes within your speciality
Managing and training any commis working with you
Helping the head chef to develop new dishes and menus
Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
Monitoring portion and waste control to maintain profit margins
What hours will I work?

5 days per week

Sunday evenings off as the pub is closed.

You'll probably have to work split shifts and at least 48 hours a week. evenings and weekends

An ability to delegate appropriately

What qualifications do I need?

Most chef de parties will have spent four years as a commis chef and have at least NVQ/SVQ Level 2 or equivalent under their toque. Other useful qualifications include:

Someone who's got bags of stamina and enjoys the fast pace of working in a kitchen. You also need to be able to stay calm and work as part of a team during a frenetic service. As a member of our team you will have a huge passion for food, flavour and good service. You will have the opportunity to learn and develop skills working along side Our Head Chef.
